Here at the Fermentorium, we pride ourselves on creating delicious, one of a kind flavors by letting all our ingredients undergo fermentation. This not only creates unique flavors, but also allows us to make caffeine free kombucha!
Traditionally, kombucha is produced by making a sweet tea from a blend of green, black or white tea. A SCOBY (Symbiotic Culture of Bacteria and Yeast) is then added to start the fermentation. After fermentation, juices, spices and other flavor additives are incorporated to create various flavors. The end result is a slightly caffeinated, juice flavored kombucha.
Here, we do the exact opposite by flavoring the kombucha before fermentation using whole, fresh, ingredients, and allowing the SCOBY to take full control. It results in flavors that only the magic fermentation can unlock!
